The peristaltic movements of the esophagus causes a chain effect (saliva, production of bodily fluids like pancreatic juice and bile) and bowel movements is one of the consequences of this chain reaction. Your bowels are already preparing for the food that will come in.

as the food travels down from the esophagus into ur stomach, the stomach relaxes in the anticipation of food. this is called "receptive relaxation" of the stomach. also the bowels start contracting and relaxing alternately (peristalsis) to move the food down. so u maybe feeling the movements of the bowel as u eat.
but if u r referring to a feeling of passing stools as u eat, it indicates that u have some disease of the large bowel. this feeling of passing stools immediately after food passes into ur stomach is called gastro-colic reflex and indicates some sort of inflammation of the large bowel or colon.
